1 cup yellow corn meal
1 cup flour
2 Tbsp. sugar
4 tsp. baking powder
½ tsp. salt
1 cup milk
1 egg
¼ cup vegetable oil
1 cup whole kernel corn
½ to 1 jalapeño pepper, seeded and finely chopped

Preheat oven to 425 degrees. In large bowl, combine corn meal, flour, sugar, baking powder, and salt. Add milk, egg and oil. Beat until fairly smooth, about 1 minute. Fold in corn and jalapeño pepper. Bake in greased or sprayed 8-inch baking pan 20 to 23 minutes.
